Fennel Slaw with Orange and Yoghurt Dressing

Ingredients:

4 cups fennel, shaved on a mandolin slicer
4 cups Napa cabbage, thinly sliced
2 cups cherry tomatoes, halved
3 cups green beans, blanched and shocked
1/2 cup basil leaves, chopped
1 cup pumpkin seeds, roasted
1/4 cup chives, chopped
3 medium oranges, segmented and juice reserved
2 Cups Orange Yogurt Dressing (recipe follows)
Salt and Pepper to taste

Combine all ingredients in a mixing bowl and toss with Yogurt dressing. Season to taste with salt and pepper.

Ingredients:

½  cup orange juice
1/4 cup apple cider vinegar
2 tbsp hemp oil
1 ½  cups yogurt
Salt and pepper

Whisk all ingredients together in a mixing bowl. Season to taste with salt and pepper.
